1 cup sugar
4 tablespoons margarine
2 large eggs
1-1/4 cups milk
2-1/2 cups flour
2-1/2 teaspoons baking powder
1 teaspoon vanilla
1/2 teaspoon salt
1/3 cup melted butter
Cream together sugar, margarine and eggs. Add all remaining ingredients except butter and blend well. Pour melted butter over batter and do not mix. Dip batter (~1/3 cup each for my waffle iron, yielding 10 waffles) onto heated waffle iron and follow directions for making waffles.
Serve with syrup or choice of topping (although they are fantastic plain), and enjoy every mouthful with the ones you love.

Wow!! I needed a quick and portable breakfast this morning in case the kids had to eat it on their walk to school. I remember this blog mentioning you didn't have to have a topping for these waffles. Boy are you right! Fit the bill exactly, no messy syrup in a hurry, no drips on school clothes. Our new favorite!
