Holy Guacamole

Tonight is our Relief Society Birthday dinner, and this is half my kitchen island. Mom and I are spending the day making 40 cups of guacamole. And it looks like we'll just make our deadline!


Until this week I'd never made guacamole. So we've done a number of test runs this week, including purchasing ready made varieties, and, if we like them, reading the ingredient list so we know what to add to our recipe. Our final recipe tastes pretty good if I dare say so:

4 avocados, diced and slightly smashed with a fork
1/2 cup yellow onion chopped
1/4 cup red onion chopped
2 Roma tomatoes diced
1 tablespoon
jalapeno puree
juice of a lime
1 teaspoon salt
2 dashes of pepper


This little judge things the guac is better than the chips! Let's just hope the ladies do too!

That does look like a tasty recipe.

But... Surely that doesn't make 40 cups? Didn't you have to multiple it by a whole lot to get your quota?

since moving to california, i've gone avocado crazy...they're so inexpensive here. i bought some today, 33 cents each. i'm glad you found a good recipe!
