Last week I had lunch with Stormy, Carol and Renee (Stake RS Presidency) and Renee served this amazing tuna salad on top of fresh spinach from her garden ... it was so yummy, that I begged for the recipe:
Greens
Cottage cheese
a tomato, diced and partially seeded
tuna salad = albacore tuna, sour cream, mayo, celery, onion, snow peas, bacon
sprinkle lemon pepper generously
cashews
3 snow peas
