1 cup flour
2 tablespoons baking powder
1/2 teaspoon salt
1 beaten egg
1 cup milk*
2 tablespoons salad oil.
* For thinner pancakes, add 2 more tablespoons of milk to batter.
Put frying pan on stove and turn on heat to low.
While the pan is heating, make the pancake batter.
Do not put oil in the pan until the batter is prepared.
In a large bowl, combine egg and oil. Add milk. Combine dry ingredients in another bowl and add to egg/oil/milk combination, stirring just until the dry ingredients are moistened.
Put just enough oil in the frying pan to coat the bottom and up the sides of the pan about 1/2 inch.
Pour about 1/2 cup batter into the center of the pan. Watch for bubbles to come up in the pancake. Then watch for the outer edge of the pancake to look "dry". The bubbles and the dry look are indicators that it is time to turn the pancake over. After flipping the pancake over, you should see the pancake puff up. Wait just a little for the second side to brown and remove the pancake to a plate.
The above recipe makes about eight 4-inch pancakes.
I typically tripple this recipe, but I also make big pancakes that are 6-8 inches in diameter.

I was wondering though, if you were going to post the buttermilk variation. Do you like this one better?
MA, I think the ones pictured are the ones I made using buttermilk. It worked just fine, but that batch wasn't quite as good as past batches... my pan might not have been the right temperature, I'm not sure. I think I used 1/2 buttermilk and 1/2 regular milk.

Yeah, I wondered if that was going to sound weird... but that's what mom typed... and yes that just regular cooking oil (veggie/canola/etc.).
